  • Do you need to consider the room the temperature while the dough rests overnight?

    • When it’s much warmer the yeast works faster and I don’t know how much faster. Possibly after 6 hours it smells strongly of alcohol then and that’s a sign of overripeness. It may be that it not expands during baking later and you create a brick....
