  • Sounds great! Any salt? I've never made kimchi. I usually don't eat it very often but I may eat it more if I made my own 🤔

  • Salt is used initially to extract the water from the cabbage and to begin the fermentation process. I usually use commercially made kimchi but made my own on occasions which has turned out remarkably well. It is certainly an acquired taste.
