Three quick, satisfying and tasty organic, gluten-free pasta recipes
Edamame spaghetti with kale and coriander pesto
Gluten-free deliciousness for the perfect midweek meal
Ingredients
- For the pesto: 225g chopped kale
- 225g coriander
- 60g slivered almonds, toasted
- 1 garlic clove
- 1 red chilli
- 1 tbsp lime juice
- Pinch of salt
- 60g Grated Parmesan Cheese
- 120ml olive oil
- For the spaghetti: 1 knob ginger peeled and sliced into shards
- Olive oil (for ginger)
- 1 box Explore Cuisine Edamame Spaghetti
- 2 carrots sliced into ribbons
- 60g shredded coconut toasted
Instructions
- Blend first seven ingredients (kale through to salt) in a food processor. Add cheese. Stream in olive oil while machine is running. Turn off and set aside.
- Saute ginger in a bit of olive oil, until crispy. Set aside.
- Bring a pan of water to the boil. When boiling, add Edamame Spaghetti. Cook for 4-6 minutes, until al dente or firm to the bite. Drain and rinse.
- Toss together spaghetti with carrots and pesto. Portion into four shallow, wide bowls. Sprinkle with ginger and toasted coconut.
Recipe Notes
Vegan alternative: Omit Parmesan cheese. Use a dairy-free vegan version, or a bit of nutritional yeast if you like, in its place

Black bean sesame fettuccine with vegetable ribbons
So quick and easy, you'll love this dish.
Ingredients
- 1 box Black Bean Black Sesame Fettuccine
- 2 carrots
- 1 large courgette
- Olive oil
- Toasted sesame oil
- Black and/or white sesame seeds
- Salt and freshly ground black pepper
Instructions
- Cook fettuccine according to package instructions.
- Meanwhile, slice vegetables into ribbons using a vegetable peeler.
- Drop vegetables into boiling water for 30 seconds, then drain.
- Toss fettuccine with vegetables and a splash each of olive oil and toasted sesame oil to coat.
- Season with salt and pepper.
- Garnish with sesame seeds.
- Enjoy!

Easy black bean spaghetti dinner in minutes
A simple, gluten-free dinner you can have on the table in minutes
Ingredients
- 1 box of Explore Cuisine Black Bean Spaghetti
- 1 container of heirloom tomatoes
- A splash of olive oil
- Fresh basil, torn into small pieces
- 2 cloves garlic, minced
- Chilli flakes
Instructions
- Boil a pan of water, add organic black bean spaghetti, cook for 8 minutes, drain.
- Dice and remove the seeds from your heirloom tomatoes. Toss them with good quality olive oil, fresh basil, minced garlic, salt and chilli flakes.
- Combine the pasta with the tomatoes.
- Enjoy!
