I love a good salad, but sometimes they can be a little repetitive. Trying a new vinaigrette can completely change the whole dish.
Basic vinaigrette:
A basic vinaigrette should be made up of:
60% oil – Olive oil, sesame oil, sunflower seed oil, peanut oil...
30% acidic juice or vinegar – Wine vinegar, applecider vinegar, balsamic vinegar, lemon juice, orange juice, lime juice...
10% flavour – you can be creative here. Use herbs, other sauces, nuts, fruits, jam, honey and other sweet things to make a contrast, or even a mix of them.
Also you can add a pinch of salt, pepper, or any spices you like.
If you are using large chunks of ingredients, use an electric blender to mix it all together.
Lemon basil vinaigrette
Oil, lemon juice, lemon zest, chopped basil leaves, chopped garlic clove, two teaspoons of mustard, salt.
The more basil leaves you add, the more intense the vinaigrette flavour will be.
Honey mustard vinaigrette
Oil, balsamic vinegar, whole grain mustard, honey and salt.
You can add a little bit of Tabasco sauce to make it spicy.
Orange Ginger vinaigrette
Olive oil, orange juice and lemon juice in 3:1 parts, chopped garlic, chopped ginger, honey and a little bit of Sriracha sauce.
Mango vinaigrette
Olive oil, lemon juice, diced mango, honey, salt, and black pepper.
You can also add jalapeños and cilantro.
Lime and cilantro vinaigrette
Oil, lime juice and vinegar, cilantro, brown sugar, 1 garlic clove, a teaspoon of mustard, and salt.

This very helpful so thank you, as I eat a lot of salad. Salads for summer, slow cooked oven dishes and casserols for winter.

Not at all! I started to liked them recently, the weather was so warm in summer, it was the only thing I could eat 😅. That, and gazpacho, a spanish vegetable cold soup😋
They do not fill me up and I feel like a cow sitting and munching copious amounts of it.

Occasionally I make a warm bacon dressing. When I do that I like bleu cheese on the salad and the dressing will give a slight melt to it. A nice blend of sweet and tart with the bite of the bleu cheese.
