Boil 'em, mash 'em, stick 'em in a stew; we all absolutely love potatoes. They're a staple food for many people all over the world and for very good reasons. The humble potato is an infinitely versatile food that can be used in pretty much any kind of cooking, from a Sunday roast to a curry, to continental European delights.

With that in mind, I've scoured the web to find you some great potato recipes you can use either as a main dish or as a side. A lot of the main dishes I've put here are veggie or vegan and some are even gluten-free, so if you want to expand your horizons in terms of cooking that doesn't involve meat or gluten, some of these are great options to have a go at making!

Pommes Anna

This recipe from Sainsburys' Magazine provided by the ever-loveable Dick and Angel Strawbridge (of Escape To The Chateau fame, or indeed you might remember Dick Strawbridge from Scrapheap Challenge!) is a classic French side dish that'll be a great addition to your Sunday roast. It's vegetarian and gluten-free and only requires two ingredients so it's pretty simple to make.

Herb-roasted new potatoes

This recipe from BBC Good Food by Mary Cadogan is a great one for making some good old-fashioned herb-roasted potatoes. It only requires a few simple ingredients, you can use duck fat if you want to be extra fancy and you could maybe even experiment with the herbs to try something different if you wanted to.

Vegan hash browns

Hash Browns (or Kartoffelpuffer if you're a German speaker) are great. They're a perfect part of any cooked breakfast, whether it's an American-style one or a more European affair. This recipe from ElaVegan is a great one for making some fully vegan-friendly hash browns. They're easy to make, don't take that long to cook and you can even make them in a few different ways depending on whether you prefer them baked or fried. You can also add extra veg to them depending on your taste. The possibilities are almost endless!

Swiss potato rosti

If you want to have a bit of European flair as a side to your main dish, this recipe for rosti by Jennifer McGavin is a good one. The Swiss classic that's somewhere between hash browns and potato cakes is great when served as part of a lunch or dinner and goes equally well with salad, meat, cheese, sausages or eggs. It only requires a few ingredients and you can personalise it if you feel a bit fancy! This recipe also recommends you use a cast-iron skillet to cook your rosti so if you've just bought one and you want to try it out, it might not be a bad idea to start off your cast-iron journey by making this.

Spinach, chickpea and potato curry

This is a proper main meal that involves a fair amount of potatoes and it's really, really good! This recipe for a spinach, chickpea and potato curry by Adam Bush is totally vegan-friendly, not too spicy and a great way to use up some ingredients in your store cupboard. I know chickpeas can be a bit of a love-hate thing for some people (I personally love them, but my dad won't touch them with a barge pole) and spinach can be a bit like that too, but combined in a curry with a fair amount of potatoey goodness that everyone loves makes a brilliant combination. It's probably also a pretty good entry into the world of curries because it's not going to blow your head off with heat!

Easy veggie stew

Also from ElaVegan, this recipe is for a super easy veggie stew that'll make a very good main meal. While it's initially designed as a stew, you can use a blender to puree it up into a nice creamy soup. Like many of the other recipes here, you can add extra veg of your choosing to personalise it a bit more and you can also use sweet potatoes instead of good old-fashioned regular potatoes if you fancy a bit of a change.

Aloo Dum (potato and pea curry)

This recipe comes from Rick Stein and was featured on his TV show Rick Stein's India. It's a version of aloo dum, a potato and pea curry that's one of the most common curries that you'll find in India. In the words of Stein himself, "It’s almost like chips with everything here [in the UK], aloo dum with everything there." It's veggie-friendly, serves between 6-8 people and much like the spinach, chickpea and potato curry above is a really great entry into the world of curries. A basic aloo dum is pretty simple to make but, like all basic curry recipes, you can be a bit fancier with it by adding more ingredients and tastes.

Easy vegan scalloped potatoes

Another one from ElaVegan, this recipe is kind of similar to Dick and Angel Strawbridge's Pommes Anna that I mentioned above. It's vegan-friendly and naturally gluten-free and you can add whatever additional veg you want into the recipe to make it your own. This is a dish that would definitely go down a treat at a family get-together or for one of those days when you just want to have a nice, simple meal to cheer yourself up after a hard day at work.
