A New Take On A St. Patrick's Day Classic

Every year when it comes the time for St. Patrick's Day my mother, who's something like 1/4 quarter Irish, likes to host a little family party. And on a recent family conference call ideas were being thrown around and my dad came up with the idea of trying to update some part of the meal. It was immediately discussed that the corned beef would not be touches, but the carrots, potatoes and cabbage were up for grabs. Being someone who loves to cook, I volunteered to take on the cabbage but quickly questioned what in the world I was going to do with a cabbage. So I asked my dad and he loves the grilling, barbecuing, smoking side of the food world which led to him sending me this YouTube video from his all time favorite BBQ guy, Malcolm Reed. Prior to this I hadn't heard of anyone doing a smoked cabbage, and I'm still undecided on whether or not I'm going to do this but it looks delicious.

  • This...is much harder than it appears. I tried to smoke corned beef like I would a standard beef brisket. What could go wrong?

    There was too much injected liquid, or fat, or something...it burnt to a crisp in half the time.

    • Oh wow. Prior to this I would’ve never thought to smoke corned beef, but assuming nothing weird happens it would probably, hopefully, be really good.
