After finding some umeboshi purée while out shopping after not seeing it in quite literally ages, I had to have one of my favourite snacks as a kid – steamed corn slathered in the stuff! Perfect flavour balance between the two – the sourness of the umeboshi and slight sweetness of the corn. So good!

What is unemboshi?
Umeboshi are pickled ume fruits – sort of like a plum, but closer in relation to the apricot – that are particularly sour and salty.
