Apple and beetroot relish
Apple and beetroot relish with ginger and mint
1 apple peeled, cored and diced I used pink lady variety
1 beetroot about the size of a golf ball diced
2 mint leaves finely chopped
half teaspoon of ginger powder
Mix all the ingredients in a bowl. Leave for around 15 minutes before serving to allow the ginger powder to absorb in to the apple and beetroot. This is perfect with fish. I find it works really well with swordfish and crushed garlic new potatoes. Nice little side for a barbecue as well. #sidesmatter. The above ingredients will be enough for two people so adjust accordingly depending on the amount of people you are serving. Word of caution don't over do the ginger powder other wise you will loose the freshness from the apples and beetroot.
