As my significant other is a vegetarian, we made the nut roast from “Oh, Cook!” It was absolutely terrible.
It was dry, the pumpkin seeds were the completely wrong texture for this loaf, and it was overly seasoned.
Does anyone have any tips for altering the recipe? I think it would be pretty good without the pumpkin seeds, a bit less salt, and maybe an additional egg or some milk in the mixture.

i think James mentioned that the measurements for seasoning were not precise as everyone liked to season food according to taste. if you think there should be more milk maybe incorporate that and try judge the texture before going into the oven. if your gut says to add a dash more milk then go for it!
