Avocado honey butter. Say it again. A bit disturbed? I was. The recipe came out of the wonderful cookbook ‘Big Bottom Biscuits.’ I made those too, per recipe, and spread on a copious amount of the green butter. It’s far more light and clean than butter, none of the fatty or greasy sensation. The lemon is subtle and the avocado adds a nutty flavor. Overall it’s a refreshing spread and one you can use to your hearts desire as whatever you use it’s only about 60% butter in the final form.
