Baked vegetable tots recipe

Recipe for baked vegetable tots including courgette,carrot,champignions and some cheese

Lots of experiments have appeared recently in my kitchen, mostly with vegetables. No one is complain yet so I guess it's a good sign. Decided to experiment a bit during weekend with leftover food in the fridge. I created some kinda good baked veggie tots full of courgette (which I have a lot lately at my home) , some sweet carrot, champignions and what's more CHEESE. Let's jump to recipe then!


Courgette (Zucchini) x1

Champignions (x2-3)

Carrot x1

1/2 cup of grated cheese (I used gouda cheese which I had on my fridge)

1/3 cup of breadcrumbs

x1 egg

x1 tablespoon of oil

favourite seasoning ( to taste - I used some chilli, garlic powder, salt, pepper and curry)


1. Preheat oven to 200Β°C. Wash, peel and grate courgette, carrot, champignions on medium mesh.

2. Leave vegetables in the bowl for 10 minutes, after that time drain them. Add breadcrumbs, an egg, cheese, oil and seasonings. Mix everything ( if it's needed add some more breadcrumbs)

3. You can use hands, spoon or ice cream scoop to create shape (in my case scoop). Ready tots put on baking mould lined with baking paper. Bake them for 20-23 minutes till gold colour. Let them rest a little bit after bakinf and use spatula to take them off.

Serve them with whatever you want! I served mine version with rice stir fry with minced garlic, onion, peas, parsley and as usually lots of seasonings.
