Known and loved the world over, from family BBQs to carnival party-goers, Jerk is an authentic cooking style native to Jamaica in which meats, especially chicken, pork and fish, are marinated with a fiery mixture of allspice, scotch bonnet peppers, thyme, scallions and herbs & spices, then char-grilled to create this deliciously aromatic and spicy taste.
If you're a fan of fusion cooking, this jerk chicken recipe is the perfect one to whip up at your next barbecue. You've got the fire from the barbecue, and the fire from your delicious jerk chicken!

Bring the heat to your next barbecue
Ingredients
- 2 tbsp olive oil
- 200g chicken fillets
- 2 tbsp Grace Jerk BBQ sauce
- Pizza dough – shop bought or made yourself
- 8 chorizo slices
- 125g mozzarella
- 1/2 cup halved fresh cherry tomatoes
- Tomato sauce for the base
- Handful of rocket leaves
Instructions
- Slice your chicken fillets into strips and marinade in Grace Jerk BBQ Sauce for at least 30 minutes (although overnight is best!) in the fridge. Cook ahead of using on your pizza, either on the barbecue or in the oven for around 20 minutes at 180C.
- Fire up your barbecue to around 500C, and place your pizza stone or grill plate onto the barbecue.
- Roll out your dough by hand (or grab it out of the packet if you bought it!).
- Spread tomato sauce over your base, and arrange the chorizo, cheese, tomatoes, and jerk barbecue chicken on top. Sprinkle with some sea salt and freshly ground black pepper, and drizzle with olive oil.
- Cook on your barbecue pizza stone for around 5 minutes, when the crust should be bubbling and starting to brown.
- Remove from the stone, top with the rocket leaves and enjoy!
