Beautiful Day for a late birthday dinner!
It was a great day to be outside!
Our friend Jaci's birthday was last month and due to everything going on we did not have a chance to celebrate it. Don't worry though with the beautiful weather we mostly stayed outside at fairly safe distance and we were only a group of 5.
Her dinner request was grilled chops, mac and cheese and funnel cakes. The pork chops sat in a brine for a few hours, then patted dry and coated with a Texas bold dry rub. I made a baked mac and cheese that was topped with buttered bread crumbs.
After we ate we preceded to play a few rounds of "I Spy" and some charades. Once dinner settled I made some funnel cakes. There is nothing like some fried dough goodness with powdered sugar. Well dusted in powdered sugar!
