Independence Day is an annual national holiday in the Philippines observed on June 12, commemorating the declaration of Philippine independence from Spain in 1898.
And since it's Philippines Independence Day, I thought of making a dish that could symbolize my being as a Filipino. Since adobo is considered the national dish here. I thought of wrapping it in banana leaves which is very traditional accompanied by tomato and salted egg. inspired from Ilonggo Grill, my favorite restaurant that my family and I used to eat at when I was a kid.
