Breakfast in a bun without the mess

How often do you have a burger with the egg, the bacon rashers, the mushroom then have to get it to your mouth without everything falling off the bun. I have solved the problem. create a burger with everything inside it.

INDREDIENTS

2 Sausages of your choice with the skin removed. I used pork and leek

1 breakfast mushroom finely chopped

2 rashers of bacon diced. could use lardons

3 eggs

1 shallot diced

1 beef tomato sliced

lettuce leaves

200g of minced beef

salt and pepper to season

mayonnaise

METHOD

Preheat the grill

In a bowl combine the minced beef, sausage, mushroom, shallot and bacon and season. Take one egg and crack it in the the mix to bind it all together. Form 2 patties then create a small well in the middle making sure not to go all the way through the meat. Grill the patties for 10 minutes well side down first. Turn the patties over and cook for 7 minutes. crack an egg in to each well and cook for a further 5 minutes or adjust accordingly to your preference of how you like your eggs cooked. Toast burger buns and spread the bottom with mayonnaise next lettuce and then tomato top with the burger patty and put the top on. Enjoy the burger without the risk of loosing half of it before it gets to your mouth.
