Breakfast for dinner: The Jewish bagel omelet
Please forgive me for the pork products on the plate
My beautiful wife Stacey is Jewish and she introduced me to many awesome, really good Jewish foods. One of those awesome foods is a bagel with lox, and I decided to turn that into an omelet!
I started by frying up some onion, which I set aside after it softened to start on the eggs. Five eggs went into a bowl and were whisked, and "everything bagel" season was added. Then, it was into a buttered frying pan!

I started building the Jewish Bagel Omelet by layering the ingredients. First in; globs of cream cheese! I went a little light on my wife's side of the omelet. Surely you didn't think I was going to eat a massive five egg omelet by myself!
Next, I added the fried onion on top of the cheese. This was followed up with capers, but really only on my side as Stacey doesn't seem that fond of capers. After that, salmon lox was added to finish off the pile of goodness before the omelet was folded for serving.
Unfortunately, I forgot to take a picture of the beautiful lox! After folding the omelet, I sprinkled more everything bagel season on top to help give it that extra punch of bagel-like flavor.

As an added bonus, my wife made jam using freshly picked blueberries from her garden! It was a really nice, sweet treat to go with our breakfast for dinner. I also fried up a couple of slices of my favorite New Jersey treat; Taylor Ham pork roll. Sorry, but the kosher rules don't apply to me and my wife doesn't care if I indulge myself! Our breakfast plates were rounded out with some hash brown potatoes that Stacey prepared, using herbs and jalapeños grown in her own garden. Breakfast for dinner was GREAT!
