Brioche burger buns: The only recipe you'll ever need
Everyone knows a burger is better with a brioche bun... now it's time to make your own
The original recipe is for 7 buns. Because we just needed only 3 we halved the quantities of the recipe below and received 3 nice, big Brioche. But because we forgot to halve the yeast they went a bit out of control in size, but they were super delicious and extra fluffy that way.

Hope you enjoyed! I recommend to toast the buns in a large pan without oil or anything before you top your burger, to prevent the Brioche from soaking up the sauce. Happy baking!
Soft and Fluffy
Ingredients
- 375g Flour e.g. Type 405
- 40g Sugar
- 10g Salt
- 4 Eggs M-Size
- 100g Butter, room temperature
- 1/2 Block Yeast (21g) or 1 package dry Yeast (7g)
- 75g Milk
- For the glaze: 1 egg, sesame (optional) and a little bit milk
Instructions
Preparation
- Pour Flour in a bowl and add all the other ingredients
- Mix it for 20-25 minutes until no dough isn't stuck to the bowl anymore
- Cover the bowl and put it in the fridge for 2 hours
- Take it out the bowl. Knead the dough 2-3 times and form 7 bun shaped dough-balls to 90 grams each
- Place the balls on a parchment paper covered baking sheet. Make sure there's enough space between the balls
- Turn the oven to 30°C
- Let the dough rise for about 1.5 hours
- For the glaze mix the egg with some milk and carefully spread it on the dough-buns with a brush. Sprinkle sesame on it
The Baking
- Preheat the oven to 165°C, fan (circulating heat).
- Place a baking pan with some water on the bottom of the oven
- Place the baking tray with the buns in the lowest shelf
- Remove the baking pan after 5 minutes
- Continue baking for another 10 minutes
- Let them cool down a bit before serving

Tried and failed. Everything was going great until I've started to read another article here, forgot them in the oven and not just burned them . . I've literally cremated them! Only ash is what was left 😢😂
P.S. I did the dough in my bread-maker instead of doing in by hand. Worked perfectly (1:30 hours to make)
