My friends never guess this dish is made with Brussels sprouts when they first try it. I often replace the bacon with prosciutto and the spouts with lettuce when I'm in Italy. The dish also works well with grapes too in the summer.
- juice of half a lemon
- juice of half an orange
- 3 tablespoons of cider vinegar
- ½ cup almonds
- salt and pepper to taste
- 3 slices grilled bacon
- 1 finely chopped shallot
- 20 sliced sprouts
- ½ cup grated parmesan
- First make the dressing by blitzing the almonds, juices and cider vinegar. Taste and then season to taste with salt and pepper.
- Place the sliced Brussels sprouts, shallots, bacon and grated parmesan in a mixing bowl and gently mix.
- Lightly stir in the dressing and serve.
