Bulgur Wheat Salad Recipe

This quick little salad needs no cooking and you can adapt it to add any fresh ingredients you have around you.

In these difficult times it's not always easy to get your hands on fresh produce and so I am trying to feature some recipes that use long lasting ingredients.

Bulgur wheat is brilliant for this and yet with very little additions it makes a fresh tasting salad.

If you haven't got the exact ingredients I put in this recipe don't worry just adapt. It would be just as delicious with cucumber, asparagus, finely chopped mushrooms or even cooked broccoli.

Bulgur Wheat Salad Recipe

No cooking required

Ingredients

  • 1 cup bulgur wheat
  • ½ red onion finely chopped
  • 2 chopped tomatoes
  • a handful of finely chopped flat leaf parsley
  • 4 tablespoons of olive oil
  • juice of half a lemon
  • salt and pepper

Instructions

  1. Soak the bulgur wheat in water for 20 minutes then drain.
  2. Put into a chopping bowl and add all the other ingredients and stir well and season with salt and pepper.
  3. Put into a serving bowl and eat.
