easter is coming, and im totally prepared because of this recipe. all that chocolate, all those easter eggs- why not change it up a bit and get a few vitamins in you with these easy carrot cake cupcakes?

ive always loved carrot cake, but had never made it before, so i thought its now or never and i gave this recipe a bash. i did make a massive mess of the kitchen, but oh boy was it worth it.

Ingredients

  • 1 1/4 cup plain flour
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 cup caster sugar
  • 1/2 cup soft brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups peeled grated carrots
  • handful of pecans and walnuts
  • 8 ounces cream cheese
  • 1/2 cup soft unsalted butter
  • 1 teaspoon vanilla
  • 3 cups of icing sugar

Instructions

  1. pre heat an oven to 180 degrees c
  2. add the baking powder, cinnamon, ginger and flour to a bowl
  3. add the oil, sugars and vanilla into a mixing bowl and mix well
  4. add one egg at a time to the wet mixture and whisk until combined
  5. add the dry mix 1/3 at a time and fold until theres no lumps
  6. add the grated carrot and chopped pecans/walnuts
  7. cook for 25 mins and leave to cool
  8. add the icing sugar, vanilla, butter and cream cheese into a bowl and beat with an electric whisk for 2-3 mins
  9. ice the cupcakes and top with chopped pecans/walnuts
