CHALLENGE: Make a dish (or drink) with rum

In the throes of Australia's recent lockdowns, I realised I couldn't take bars for granted again. Since it ended a few weeks ago, I've been back on the scene, trying new watering holes and revamped drinks menus. I even tried Gin & Tonic again. It's as bad and medicinal-tasting as it was before, but this time I finished it. I said I'm not taking anything for granted.
For spirits, though, surely rum remains where it's at. Rum punches like a spirit should, but it smells better than whiskey and there isn't the awful aftertaste of gin. It enriches Christmas fruit mince pies. There's a European dessert that involves soaking bread in it. Australia's own Bundaberg proves it's amazing with chocolate, and even though it's as basic as gin & tonic - rum & coke is thoroughly more drinkable.
This is exactly why it's the basis for FoodTribe's newest challenge - making a dish, or a drink, or a gin-rivalling eau de toilette even. The rules are simple:
Create your dish, using any amount of rum. Don't forget to have a few sips yourself, or you will probably be disqualified in the comments by the people.
Upload a pic of the dish, with the rum you used. Use #rumchallenge in the post, somewhere, just so we can find it at the end.
Enjoy the dish/drink! We can't force this, but you will, because rum.

I'm not going to participate on this one. Sorry - I've never tried to do anything with rum, nor I've had a drink with it. In fact, I've never owned anything rum-related in my life.
