Charred cucumber salad recipe – #sidesmatter
A refreshing side that's perfect for your next BBQ
Ingredients
2 whole cucumbers peeled and sliced length ways about 4 millimetres thick
Handful of pine nuts (toasted)
The seeds from half of a pomegranate
Some chopped coriander
3 tablespoons of olive oil or rapeseed oil
1 teaspoon of sea salt
1 lime
Method
These ingredients will serve 2. You can add your own desired quantities depending on how many people you are catering for.
Heat a pan, add pine nuts and roll around the pan until they start to brown. Remove from the pan and allow to cool. No oil required.
Take the slices of cucumber and lay on a tray, sprinkle with sea salt and leave for one hour.
While the cucumbers are salting preheat barbecue or griddle pan.
When ready to cook take each slice of cucumber and pat dry with some paper towels.
Drizzle with your chosen oil and cook on barbecue or griddle pan on both sides until you have some char marks then remove from pan and allow to cool.
Arrange the cucumbers on a plate (see photo) and sprinkle with pine nuts, pomegranate seeds and chopped coriander. Squeeze over the lime juice and using your fingers mix well.

This looks lovely and very refreshing!
this could be tweaked by adding chilli flakes and be a warm salad. The cucumbers taste a bit like courgettes when there warm. Chilli and lime are a marriage...
