Cheesesteak Omelet - I'm #@$%ing Brilliant!
What to do with left over cheesesteak fixings? Breakfast!
First off guys, before I get to the task of tooting my own horn with how brilliant I am for having created a cheesesteak omelet, let me tell you that I've missed you all. While I have been lurking in the background around Foodtribe, and getting really hungry while doing so, life has been REALLY busy. Work in particular has been eating up my time, and unfortunately, there looks to be no end in sight before that ends. Logging in to write this article, I saw that it has been over one month since I've written any content, and I have definitely missed it. Sadly, I haven't had the time to really explore cooking in the kitchen. I've been eating well though; enjoying dishes like my favorite Steak Diane, smashburgers (of course!) and cheesesteaks on my griddle. Which leads me to the brilliant Cheesesteak Omelet!
We had some shaved ribeye in the freezer, so of course cheesesteaks ended up on the menu. But unfortunately, when we bought the rolls at the supermarket, they were all small! This may have been a good thing for me, as I tend to eat too much of the good tasting foods that are not good for me. That meant smaller cheesesteaks and leftover cheesesteak meat.
There wasn't enough cheesesteak meat leftover, however, to make a sandwich out of. So for our Sunday breakfast, a flash of inspiration hit me, and the cheesesteak omelet was born! I even had the proper cheese on hand to melt into my omelet; the same cheese that goes on my cheesesteaks -white American Cheese! Some sautéed onions were also added, and boom!!!! The most awesome and brilliant omelet I've ever made!!!!

I plated my half of the Cheesesteak Omelet with some hash browns and two slices of pork roll. But I wasn't done yet! And I considered this next part a little bit of a risk...
...I spread mayonnaise on my Cheesesteak omelet!!!! You see, a good cheesesteak has mayo AND some sort of spicy/tangy vinegar component to it's flavors. So I rolled the dice and lightly spread some mayo on the top of my omelet, and added Cento Hoagie Spread (pepper relish) to round out the flavors.
PERFECT!

Let me tell you, it all turned out perfect! The flavors were on point and tasted just like a cheesesteak. I'm glad I topped it with the mayo and pepper relish because it really took the flavors over the finish line and made it compete. I actually can't wait to do this again!
