I have not poached eggs for a while. The eggs I had were a bit old, but some white vinegar and a swirly vortex were my friends. Despite all this, and being relatively successful in the past, there is always that nervous part after you've plated and you go to break into the yolk.
Did they run, you ask?
Why yes they did! The relief was massive; the joy, insane! It was beyond fantastic. It is hands down the best feeling when you are craving a runny poached egg and you achieve success. There is no better start to the day.

Exploring some new flavours – sharp cheese and Cajun seasoning
This morning, while the important part was the gorgeous, runny yolk, I also wanted to try a new flavour combination. It had to be simple, yet delicious. I chose thinly sliced Tasty Cheddar cheese and a light sprinkling of Cajun seasoning.
I was initially worried it might be a bit dry, but the runny yolk saved the day. The sharpness of the cheese was lovely against the subtle salt, tang, and spice from the Cajun seasoning, and the creaminess of the runny yolk just made this breakfast epic supernoms.
It's porn I know, but sorry, not sorry!

I have a homemade creole that I use on eggs a lot along with a lot of other foods.
Creole is another flavour I'm really keen to explore, I need to get some and give it a go
