Sinampalukang Manok has similarities to Sinigang, which happens to be one of the most popular Filipino dishes. I like Sinampalukang Manok because it is simple and delicious. This dish has minimal ingredients yet it is very flavorful. I prefer to have it while it’s still piping hot.
Tamarind leaves are traditionally used to make the broth sour, and these are boiled until the flavors are completely extracted.
What is tamarind?
Tamarind is a tropical fruit used as an additive flavor in cooking. Harvested from the brown, crescent-shaped pods of the tamarind tree, the sticky pulp inside is removed from around the seeds. Also known as Indian date or Imli in Hindi, Tamarind is high in tartaric acid which adds a tart, sweet, or sour taste to dishes and drinks. Indigenous to Africa, Tamarind is now grown in tropical climates around the world, particularly in India, Southeast Asia, and the West Indies.

I believe that the dish simply lacks the fame and recognition that it truly deserves, and I actually find it a bit sad that it is one of the most under-rated Filipino dishes today!

Yes Fulana but only the young leaves are commonly used as a souring agent in cooking
