Boneless skinless chicken thighs marinated overnight and then grilled. A quick Mediterranean style salad made up of cucumber, onion, tomatoes, olives, feta, red wine vinegar and plenty of oregano. A garlicy yogurt sauce for my shawarma. This makes for a great summertime meal for sure.
