Taco soup: a quick, easy, & homemade solution to dinner on a work night

We all know the struggle. We get home after a long day on the job, and we long for a quick solution to that every recurring problem: Dinner.

The drain of the day, the children, and enthusiasm (or lack thereof) of our partners oftentimes results in a quick call to our local takeaway, especially in today's Covid environment.

As a lover of all thing soup, I longed for an alternative. Searching the inter-web and trying out recipes, I found this one quick, easy and (even though it's made using various cans) really tasty.

Ingredients

  • 1 (15 oz) can Black Beans, drained – not rinsed. I like S&W or Bush's
  • 1 (15 oz) can Cannellini Beans (White Kidney Beans), drained – not rinsed. I like S&W or Bush's
  • 1 (15.25 oz) can whole kernel corn, drained
  • 1 (14.5 oz) can diced tomatoes – use the garlic ones if you can find them
  • 1 (10.75) can condensed Cream of Chicken Soup – I like Campbells
  • 1 (19 oz) can Green Enchilada Sauce – Medium. I like Las Palmas: mild is too mild.
  • 1 (14 oz) can Chicken Broth – Don't use low sodium
  • 1 (1 oz) packet Taco Seasoning – Use McCormick, others brands just okay.
  • 12 oz package shredded chicken breast (try to get shredded rotisserie chicken)

Instructions

  1. Combine all ingredients in a minimum. 6qt pot.
  2. Heat on high heat, stirring periodically, bring to boil.
  3. Turf off heat and enjoy.

Recipe Notes

You can adjust the level of heat by adjusting the heat level of the Enchilada Sauce. With Mild, you won't get any heat. Medium will get you a slight bit of heat. Hot will be noticeably warm. Any shredded chicken packet will work. Most markets have precooked packets in the meat section. I like the ones you can get a Target the best. The Fajita ones one at Target works too, but it isn't shredded and it will change texture.
