Chickpea Cutlets

Life has been set on high speed lately, plus we've had a heat wave cooking us for the past week or so, so I haven't spent much time in the kitchen. The temps are finally back to normal, though, so I went on a massive cooking marathon this afternoon, mostly old favorites, with a couple of new things thrown in. One of the new recipes I tried was @Emilia Moonlight Mig 's recipe for Chickpea Cutlets ( foodtribe.com/p/chickpea-cutlets-recipe-an-easy-P5VE5z28R_SRtWKHQNSMpw ). They are as tasty as she made them look in her pictures! I baked mine instead of frying, because I can't eat fried food, but other than that, I followed her directions.

To bake them, preheat the oven to 425°F and cover a baking sheet with parchment paper. Coat the paper with a little olive oil. After coating the chickpea patties with breadcrumbs, put them on the prepared baking sheet and give each of them a spritz of olive oil. Then bake them for about 20 minutes, flip them, and bake for 10 more, then serve.

I had one as a snack this afternoon and it was good!  Thank you, Emilia!

    • Thank you! They do remind me quite a bit of falafel. fries hers, and I'm sure that version tastes better, but ever since I had my gall bladder removed, fried food causes me abdominal pain.
