Chilli Cheese Spicy Rice #FelixFakeaways
By the end of this challenge, I’m sure James May will have enough material to release a FoodTribe RiceBook dedicated to every rice dish imaginable!
I’m not always one for jumping on bandwagons, but when my leftover rice kept screaming at me for days, every time I opened my fridge door, I couldn’t help but grab a bunch of random ingredients and throw together my very own Felix Fakeaway.
For this Chilli Cheese Spicy Rice, you’ll need a smoking hot pan, some oil, some random vegetables (I used zucchini, carrot, olives, broccoli), some random aromatics (I chopped up some ginger and garlic), some spice (I used some sambal oelek), then cooled, cooked, leftover rice, soy sauce, hoisin sauce, and my secret weapon - zingy chilli feta from local cheesemakers, Zany Zeus.
Little did they realise that soon they would all be the best of friends…

I started with the zucchini in the hot pan to make sure I got some nice golden colour on all sides before adding my carrots. Once the carrots also had some colour, I added the olives and broccoli. After a minute or two, I added the ginger, garlic and 1 teaspoon of sambal oelek. Then I added the rice and 1 tablespoon each of soy sauce and hoisin sauce, folding everything together until well combined.
Once everything was looking noms and smelling amazing, I pushed it all to the sides of the pan and popped in the slices of zingy chilli feta to fry on the bottom of the pan. Once it was fragrant and a bit melty, I stirred everything together until the cheese was well incorporated.
Om nom nom nom nom!
Finally, time to taste test! Creamy, cheesy, crunchy, and spicy with a hint of sweetness from the hoisin, this is one fakeaway I will be sure to come back to next time there’s leftover rice.
