Chinese-styled chicken soup (recipe)

You can buy a whole chicken in Tesco or Sainsbury.

Then buy a some dry mushrooms and some wolfberry (枸杞).

Put some dry mushrooms (5 per person) into water to hydrate it.

Cut the chicken into pieces and remove the fats in it. Put the pieces in cooking wine (or any alcohol. Try gin and tonic).

Put it with sliced ginger in water in a pot and cook with full power on the hob. Remove the layer of white substance on it.

  • Switch to medium or low power, add mushrooms and wolfberries.

    Close the lid and keep it heated in low power for 2 hours, or 1.5h, then add spring onions in it. Finished.
