Chipotle shared its corn salsa recipe on TikTok so you can recreate it at home
It's really simple to make, too!
With lockdown still very much a thing in a lot of parts of the world, for many of us it's been months since we've been able to go and have a meal out. I know I certainly miss being able to go to some of my favourite little places in Mumbles, discovering new places to eat out in London, or even just grabbing some McDonald's fries after a night out (something about those super-salty fries is just so good when you're knackered after a good night's worth of hanging with your mates).
Some restaurant chains have realised how much we're missing their food and have, in a stroke of marketing genius, released the recipes for some of their most popular dishes online. The latest chain to jump on that trend is Chipotle. Chipotle already made some serious waves by dropping the recipe for its guac (because guacamole is always just that little bit better when it's homemade), and it's now gone a step further by releasing the recipe for its medium roasted corn salsa.
As you can see from the rather chaotic TikTok Chipotle uploaded, the corn salsa is very simple to make. It only requires 6 ingredients: corn, red onion, jalapeños, cilantro (or coriander if you're British or European like me), some salt, some lime juice and a minimal amount of prep and mixing. If you're missing your favourite meal from Chipotle or just planning to make some Mexican grub at home and need a salsa as part of it, you probably can't really go wrong with cooking this up.
While it hopefully won't be too long until we can go and eat out like normal and enjoy recipes like this one in their natural habitat again, it's really great that restaurant chains have been releasing the recipes they use themselves into the public domain.
It's a great way of getting that odd sense of comfort from having one of your favourite dishes again. It could be a great way of expanding your skills as a cook too, especially if you don't usually cook the kind of food served at places like Chipotle at home.
