Recipe: Indulgent vegan chocolate fudge cake

As voted by you, and as promised, here is our vegan chocolate fudge cake. The perfect cake for celebrations and when you just need some indulgence in your life! This cake is dairy free and you could also make it gluten free by swapping out the self raising flour for a gluten free version. You'll also need to take out the chocolate fingers but you could replace with curls of dark chocolate. If you have a go at this recipe, drop us a message and let us know how you got on.
330g self raising flour
70g cocoa powder
1 TSP bicarbonate of soda
115g vegan butter
400mls plant based milk
2 tsp vanilla extract
100g chocolate chips
Place the butter and sugar into a bowl and cream together until sugar has disappeared. Then add in the vanilla extract and plant based milk and mix in as best as you can.
In a separate bowl place the dry ingredients flour, cocoa powder, bicarbonate of soda. Mix together. Then add to the liquid mix and beat until all combined together.
Then fold in the chocolate chips.
Place into either three 20cm cake tins or one large 20cm to cut later.
Place into the oven until a skewer comes out clean. If using a large tin then cover with tin foil to avoid the top burning.
For the butter chocolate icing, I used plant based butter, cocoa powder and icing sugar and made the quantity I needed to make enough to go between the three layers and to coat the outside.
Then decorate with Cadbury Bournville fingers, chocolate covered strawberries and fresh blueberries.
