For a long time, folks with a nut allergy had to accept a lot of sweet stuff was off limits. They couldn't even have their cake, let alone eat it. In the UK, about two in 100 children and one in 200 adults have an allergy to nuts. So many uneaten almond croissants and Bakewell tarts!

But then came along The Great British Bake Off semi-finalist Rosie Brandreth-Poynter, who has a severe nut allergy and yet, is rewriting the rulebook with her nut-free (and lactose and gluten-free) recipes. Rosie can't cook with nuts, handle them, or in the case of Brazil nuts, even be in the same room as them.

Rosie, who is a full-time vet, previously revealed on Twitter she started baking because both her and her sister are allergic to nuts and weren’t able to try baked goods from shops and bakeries. She commended the GBBO team for keeping all her equipment “totally separate” and cleaning her bench separately.

Since appearing on GBBO in 2019, the 29-year-old's Instagram account is awash with colourful and delicious bakes such as Beignets Souffles (a cross between a profiterole and a doughnut), with a silky salted caramelised white chocolate sauce, Banoffee cheesecake meringue pie and a nut free, vegan Battenberg! Drooling much?

Now Rosie has teamed up with Liebherr who make seriously swish fridges and asked this star baker to recreating the ultimate German Christmas treat: stollen. But obviously void of almond paste, yet still as tasty as tradition dictates. We are excited to share Rosie's recipe for her nut free stollen, complete with a brandy marzipan.

The recipe is more than suitable for novice bakers, so no need to feel intimidated. In fact, we guarantee by the time you've finished you'll be reaching out into mid-air for a Hollywood handshake (that will never come!). All you really need is a decent fridge and some patience. It needs to chill in there for quite some time.

But that's where Liebherr come in: the brand's freestanding fridge-freezers for example, are outstanding appliances with plenty of room for storage and long lasting freshness, thanks to BioFresh technology.

Liebherr also do table-height refrigerators with lots of useful features. The spacious fruit and vegetable compartments are particularly practical for storing larger items. Meanwhile the height-adjustable and scratch-resistant GlassLine shelves are made from safety glass and are super easy-to-clean.

This simple Christmas recipe is full of flavour and will no doubt become a yearly favourite. It's delicious served warm for afternoon tea, or toasted with jam for a comforting, post winter walk warmer. Here's a picture of it just before Rosie put it in the oven in all its squidgy, doughy splendour. Slather it in butter, yum!

    • I am seriously glad they are shedding light on allergies, as many in Europe face allergic reactions to food. Though for me I will say I love the everyday original stollen.
