#CocktailCupcakes: Gin & Tonic cupcakes recipe

Looking for some ginspiration? These cupcakes are simply gincredible

Post sponsored by

Gin and tonic flavoured things are everywhere. We've seen the good (these cupcakes), the bad (candles, crisps), and the ugly (yoghurt, cheese, ketchup... ok so we made that one up, but our point still stands).

While liking gin isn't a personality type, it is delicious, and caputuring the flavours of a citrussy G+T in a cake is downright delish.

If you're looking for some ginspiration for your next baking gincounter, time to think like a gin-ius, escape the ginsanity of life and bake up a batch of these. And apologies for the ginflux of groan-ginducing puns. Some might say we've over-gin-dulged, or gin too far, but we've ginjoyed ourselves...

We made these G+T cupcakes using the Tefal Cake Factory, which guarantees perfect results every time. The temperature is adapted to each stage of the baking cycle by going up and town (technical term: ‘a unique temperature curve’) to the exact heat needed, so you can spend more time on your weekly gin workout instead.

  • 110g butter
  • 110g golden caster sugar
  • 2 large eggs
  • 120g self-raising flour (possibly a little more to compensate for the gin. See how it goes with the consistency)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Zest and juice of 1 lemon
  • 15ml gin
  • ...For the buttercream...
  • 150g butter
  • 300g icing sugar
  • 15ml gin
  • 15ml lemon juice
  • Zest of a lemon
  • ...For the gin syrup...
  • 75g granulated sugar
  • 60ml water
  • 15ml gin
  • 15ml lemon juice
  • Few juniper berries
  • ...For garnish...
  • 1 lemon, cut into slices
  • Muffin cases
  • Cocktail umbrellas

  1. Beat together 110g softened butter with 110g golden caster sugar until pale and fluffy.
  2. Whisk in your 2 eggs, one at a time, until combined.
  3. Add 120g self-raising flour, 1/2 tsp baking powder, 1/2 tsp salt, 15ml gin, zest and juice of a lemon, and combine.
  4. Divide the mixture into six, and add into the muffin moulds of your Tefal Cake Factory.
  5. Set your Tefal Cake Factory onto 'Programme 2: Muffins', and set the timer for 30 minute.

Gin and lemon buttercream

  1. Using an electric whisk, beat 150g softened butter until even softer, then add 300g icing sugar and beat together. Cover your bowl with a tea towel unless you want a very white kitchen.
  2. Add your gin and lemon juice/zest. Mix until the right texture. Add a bit more icing sugar if required.

G+T and lemon syrup

  1. Heat 75g of sugar with 50ml of tonic water, 15ml of gin and the juice of a lemon. Heat until the sugar has dissolved and it's thickened. Turn off the heat and leave to cool.

  1. When your cupcakes are cooked and cooled, make a few small holes in the cake with a skewer, add a little syrup to each one, and pipe on the buttercream. Top with a slice of lemon, and add an extra cocktail umbrella if you want.
