Is there a better combination in life than rum, lime, a little sweetness, and herby mint? In a drink, it's pretty perfect, but it turns out you can improve on an original. That's why we've made these Mojito cupcakes, featuring all the flavours of the cocktail, but with the added improvement of… cake.

We're all craving a holiday right now, and we are need a little more sunshine in our lives. Whether that's from the actual sun... or from these cupcakes. Okay, so the cakes might contain a little less Vitamin D than the big yellow guy in the sky, but they do contain just as much happiness.

We made these delicious cakes using the Tefal Cake Factory, which guarantees perfect results every time. The temperature is adapted to each stage of the baking cycle by going up and town (technical term: ‘a unique temperature curve’) to the exact heat needed, so your cupcakes will turn out light, fluffy, and exactly how a boozy Mojito cocktail cupcake should be.

Mojito cupcakes

Rum, lime, sweetness and mint... in a cake

  • 110g butter
  • 110g golden caster sugar
  • 2 large eggs
  • 120g self-raising flour (possibly a little more to compensate for the rum. See how it goes with the consistency)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 10ml white rum
  • Zest and juice of 1 lime
  • ...For the buttercream...
  • 150g butter
  • 300g icing sugar
  • 10ml white rum
  • Zest of a lime
  • Couple of drops of mint extract
  • ...For the mojito syrup... (makes a little more than you'll need)
  • 75g granulated sugar
  • 65ml water
  • 10ml white rum
  • Handful of mint leaves
  • 10ml lime juice
  • ...For garnish...
  • 6 mint leaves
  • Muffin cases
  • Cocktail umbrellas



  1. Beat together 110g softened butter with 110g golden caster sugar until pale and fluffy.
  2. Whisk in your 2 eggs, one at a time, until combined.
  3. Add 120g self-raising flour, 1/2 tsp baking powder, 1/2 tsp salt, 10ml rum, zest and juice from 1 lime, and combine.
  4. Divide the mixture into six, and add into the muffin moulds of your Tefal Cake Factory.
  5. Set your Tefal Cake Factory onto 'Programme 2 Muffins', and set the timer for 30 minutes. Start cooking.

Mojitio buttercream

  1. Using an electric whisk, beat 150g softened butter until even softer, then add 300g icing sugar and beat together. Cover your bowl with a tea towel unless you want a very white kitchen.
  2. Add your 10ml of white rum, lime zest and couple of drops of mint extract and combine. Check you're happy with the consistency and add more icing sugar if needed.

Mojito syrup

  1. Heat 75g of granulated sugar with 65ml of water, 10ml white rum, a handful of mint leaves and the juice of a lime. Wait until the sugar is dissolved and the syrup has thickened. Take off the heat and leave to cool. Remove the mint leaves before using.


  1. When your cupcakes are cooked and cooled, make a few small holes in the cake with a skewer, add a little syrup to each one, and pipe on the buttercream. Top with a mint leaf, and add an extra cocktail umbrella if you want.
