This has a lovely combination of flavours. Finely slice a small red onion and garlic, half a carrot length ways then slice into semi circles, dice half a red pepper, slice some chorizo into discs, get a bunch of coriander and pick off the leaves finely slice the stalks. Fry everything in a pan for about 5 mins, don't caramelise or burn anything then add tinned tomatoes place cod loins on top, put a lid on and cook on a medium low heat for between 8-10 mins. Serve with rice or couscous sprinkle over the coriander leaves, squeeze of lemon. Nice with glass of chilled white wine.
