Cold Noodle Salad with Green Apples & Prawns

Refreshing meal for a hot and humid summer day

Summer is coming. And if you're like me, it's not easy to work up an appetite on a hot and humid day. As I live near the equator, the sweltering heat drains away any motivation to cook or even eat. Luckily, I know a recipe that's refreshing and light, with the bonus of being straightforward to prepare. I guarantee you will love it!

Cold Noodle Salad with Green Apples & Prawns

Ingredients: Serves for 3-4 pax

Main Dish:

200 grams Cherry Tomatoes, cut in halves

2 Green Apples, shredded

200 grams Cocktail Shrimps

200 grams Dry Noodles

1 tbsp Coriander Leaves

Ice Water, to quench noodles

Salad Dressing:

1 tbsp Sugar

2 tbsp Sesame Oil

2 tbsp Vinegar

3 tbsp Light Soy Sauce

3 tbsp Oyster Sauce


1. Start by cooking the noodles in boiling water for about 7 minutes. The duration can be varied based on how springy or soft you want the noodles to be in the salad.

2. Once cooked, drain the noodles and quench it thoroughly with iced water. Place into a sieve and let it sit. You can also cut the noodles up using a scissor.

3. Place the tomato halves, green apple shreds, noodles and shrimps into a large salad bowl, topped with coriander leaves. Put into the fridge and let it cool for about 20 minutes.

4. In the meantime, prepare the salad dressing by mixing the ingredients in a small bowl. You may vary the amount of each ingredient to suit your taste. Get creative!

5. Before serving, pour the salad dressing into the salad. Mix well.

6. Enjoy!
