Cold Zucchini appetizer. Take fresh zucchini, slice thin, layer it on a plate. Sprinkle of salt and pepper, drizzle of good olive oil and a squirt of lemon. Lightly toast bread crumbs and sprinkle on the zucchini, grate fresh Parmesan. Voila!
