Cooking cool chicken casserole!
The chicken casserole is a home comfort dish, but what makes it so yummy?
I love chicken casserole, and I hope you will too after you have read this article about it. We like to put in a little bit of bacon so it gives a little bit more taste. We sometimes put purple carrots in it. It makes the gravy go a wierd pinky-orange colour. (Ok, it was that one time. Never again!)
Here are the ingredients we use for a chicken casserole
20 small chunks of chicken breast, 100G bacon bits, around 2cm long, chopped onion (use your chopper upperer from Oh Cook), Chicken stock (gravy) that you can make with some stock cubes and 3 medium carrots, chopped into circles.
First, put the onions in a pan (with olive oil) and cook them until golden brown. Next, when they are done, put them in a casserole dish and put them to the side. Put the chicken bits into the pan which had the onions in, so the chicken gets all that onion-y goodness. While it is cooking, parboil some carrots so they are not rock hard when you add them to the chicken and onion mix. Also, make chicken stock in the meantime. Just use a stock cube for this. Halfway through the cooking of the chicken, add the bacon. When the chicken is done, it should feel tender, but not too soft. Then add the stock, carrots and chicken to the casserole dish and put it in the oven for about 40mins. You can also add herbs such as thyme if you want to! You want to keep it cooking to make sure the stock reduces and is not too thin.
Take it out of the oven, spoon it onto a plate and enjoy with some mash and broccoli!
