Thanks to Vencolini for creating this challenge!

My entry for the #CookYourself challenge is Japanese Strawberry Shortcake, but let's get one thing out of the way - I am not Japanese. However, this cake represents my admiration for the country and culture. I love to learn about different places, enjoy different foods, and I love to travel - Japan is at the top of my long list.

This type of fruit and cream sponge cake is widely eaten around Asia, including South Korea, another top spot on my travel bucket list.

In Japan, this is known as Christmas cake and is very popular. Christmas is one of my favorite times of the year! And to add further, strawberry is my favorite fruit 🍓

Most of all, each step in the baking process took a lot of patience. This is representative of my life - each step along my journey has taken time and great care, and while I can sometimes be anxious about time, everything usually turns out okay in the end, just like this cake.

I haven't decorated too many cakes, so please excuse all of the imperfections. But that's life, right? Nothing is perfect but it is still good.

I hope you like this lovely little cake and I'm looking forward to others' entries for this challenge. Oishii! (meaning, tasty or delicious in Japanese)

  • Thank you very much for participating, Amanda! There seems to be a strawberry theme forming in this challenge and . . I wish I wasn't allergic to strawberries 😂😅 Beautiful cake from a culture that I immeasurably admire and value their morals! Just out of curiosity - did you try what we've commented earlier, to harness your inner genius into the kitchen in a way, different from what most people do?
