Corned Beef & Cabbage - In the Instant Pot!
What used to take several hours took less than two!
For some reason, I love celebrating St. Patty's Day. Quite honestly, it's an excuse for me to eat good food I usually don't get to enjoy, and to drink a lot of good beer while I'm doing it! This year I decided to start early!
This year, I preplanned a week of St. Patty's themed foods to enjoy over the weekdays before, on, and after St. Patty's day. Dinner for Monday and Tuesday is corned beef and cabbage. And to save time, I prepared it ahead of time in the Instant Pot! What used to take several hours in the crock pot or cooking low and slow on the stovetop only took 94 minutes in the Instant Pot. And it turned out good!
It was pretty simple to put together. I rinsed the 3 lb. corned beef off and placed it fat side down in the Instant Pot, and then sprinkled the spice pack on top of it. A couple of cloves of garlic went into the pot next, followed by three cups of beef broth. After that, I sealed the Instant Pot and let it pressure cook on high for 90 minutes.

I'm not sure it can get any easier than this!
While the corned beef was cooking away, I prepared a bunch of veggies; slicing up 1 lb. of potatoes, 2 cups of carrots, and one head of cabbage. Once the 90 minutes was up, I preformed a quick release of the pressure in the Instant Pot, dumped the veggies in, and sealed it up for another four minutes of cooking under high pressure. Once that was complete, dinner was done!
Yuck. I don't like carrots. But my wife does, so I cooked 'em!

Dinner turned out GREAT! The corned beef was fall apart tender, and the veggies were perfectly cooked after only four minutes. I served the corned beef dinner with a white truffle mustard, and of course I enjoyed it with a Guinness! Sláinte!!!
