😬 A user error on my weekly online shopping means I have 2KG of courgettes to use rather than just the two I actually wanted ... do you have any fab recipes you'd care to share that I can use? Any ideas (sweet or savoury) would be greatly appreciated. xx

Shred the zucchini, diced green onion, egg, flour, salt and fry it. Squeeze out the excess moisture from zucchini first!

Diced courgettes and carrots stir fried with garlic in olive oil. Add lemon juice and black pepper. Mix with pasta spirals. Voila. Vegan.

Yes, do, it is so easy and can even be good as reheated leftovers. I meant to say cut the courgettes and carrots (equal quantities) into fine julienne pieces so they cook quicker and evenly and dice the garlic so it keeps its flavour. In...
