'cream' of tomato soup

The soup season is upon us!! and there's nothing I love more than making this 'cream' of tomato soup. I use cashews to create the creaminess needed adding more protein and what I think is a nicer way to get that creamy taste. As you all probably know cashews are my favourite go to nut. Perfect for making creamy sauces, cheeses and adding a crunch to salads and stir fry's.

To make the soup I simply soften off 1 onion and 2 cloves of garlic crushed. I sometimes add fresh tomatoes chopped if I have any that need eating but mainly just 1 can of chopped tomatoes, 1/2 cup of cashews, salt, pepper, a pinch of paprika and 4 tbsp tomato puree. Cook together for 20 mins and then blend. I have to say its perfect with homemade croutons on top with a drizzle of olive oil and sprinkling of Greek basil leaves.
