Delicious and easy courgette pancakes recipe
Recipe for tasty, delicate and flavoursome courgette pancakes
Have you got courgettes in the fridge and don't have any idea what to do with them? No need to worry, I'm here to help with a little idea for you. Courgette pancakes with onion, carrot, dill, parsley, chives and seasoning is the perfect idea for a fast dinner. What more could you want?
INGREDIENTS:
* 2 Courgettes
* 1 Onion
* 1 Egg
* Dill, parsley or chives (choose your favourite, or use all three)
* Flour (3 tablespoons)
* Milk (2 tablespoons)
*Salt/pepper/chilli/garlic powder (to taste)
Additionally, not obligatory: small carrot
METHOD:
1. Wash, peel and grate courgettes on the bigger-mesh grater, add pinch of salt and set aside for 5-10 minutes. Meanwhile, dice and fry onion till it turns a golden colour.
2. After 5-10 minutes, squeeze grated courgettes to remove excess water (colander may be helpful). Grate carrot on the small-mesh grater, add dill, parsley or chives, salt, pepper, chilli, garlic powder, fried onion, an egg, flour, milk and mix everything together.
3. Preheat the pan, put the prepared mix on the pan, form gently into pancake and fry them on medium heat till golden on both sides (approx. 2 minutes)

They are nice as it is, but try to add slightly sour grated green apple to the mixture. Small apple or even half, depending on quantity. I really like it.
