INGREDIENTS
500g grey prawns
50ml Chinese yellow wine(preferably Hua Diao)
50ml water
1/2 tsp sugar
ginger slice
METHOD
Cut off the prawn heads and swimmers, I recommend to remove the tract as well
Place prawns in a cooker, mix with sugar and 25ml of wine, sit for 5min
Put the pot on high heat, add in ginger and water and bring to a boil. Then simmer on medium heat for anther 5 mins.
Pour in the remaining wine, remove from heat and keep the lid on.

No unfortunately, the taste would be different
I found online that you can try dry sherry it dry white vermouth. I think it will be a very nice experiment to use vermouth!
