Ingredients: 250g Spaghetti, 250g Duck breast, 3 Parsnips, 2 Eggs, 200ml cream, 100g Parmesan, 1TS Mushroom Salt, Pepper, Garlic, White wine.

This is mushroom salt, basically just mushroom powder and sea salt mixed together

The mushroom salt is an important ingredient as it gives the dish its twist but if you can't find it you can easily make it yourself or replace it with dried mushrooms and sea salt. For that, grind up the mushrooms with a food processor and combine it with the salt. Later it is going to be mixed with the parmesan cheese to finish the dish as a topping.

Preparation

#1 Boil water and add some salt, then add the spaghetti until they are slightly but just very slightly overcooked so that they can bind easily with the carbonara sauce and don't dry too much when you add them later to the frying pan

#2 For the carbonara sauce add cream, two eggs, 30g of the parmesan cheese and a tablespoon of white wine to a bowl and mix it up well. Let it sit in the refrigerator until its use later.

#3 Peel the parsnips and cut them into dice-sized pieces, boil the parsnips in water until they get soft. (Approx. 15-20 minutes.)

#4 Without Oil, fry the Duck until it is medium rare then remove it from the pan and keep the oil that has left the duck during the cooking process. Make sure not to use too much heat as the flavor of the duck fat degrades when burned at a high temperature.

#5 Then add a crushed clove of garlic or less and the parsnips to your pan and put the spaghetti on top. Add the carbonara sauce and fry everything slightly . Make sure the whole thing gets mixed together evenly.

#6 Mix the remaining 70 grams of parmesan cheese with the mushroom salt and some pepper then sprinkle it over the dish.

#7 Cut the duck into slices and serve it along with the spaghetti. Done.
