Emilia's baking: Simple apple pie recipe

When it's cold and cloudy outside

I haven't baked for quite long time, because there always were something different to do. But I back on a right track and I started baking again. This weekend I baked typical autumn apple pie. With shortcrust pastry, soft and light meringue layer, small touch of vanilla and cinnamon. It tasted good with my afternoon mug of tea.


* Flour ( 3 cups)

* Sugar (1/3 of cup)

* Baking powder ( 1 teaspoon)

* Butter (200 - 250g)

* 5 egg yolks

Filling ingredients:

* Apples (3-5)

* Vanilla sugar (15g)

* 1 package of vanilla pudding (40g)

* Cinnamon (1 teaspoon)

Meringue ingredients:

* 5 egg whites

* 1 1/2 of sugar

* 2 tablespoon of potato flour


1. Combine flour, sugar, baking powder and butter. Rub the dough with your fingers till fine crumble is formed. Add egg yolks and knead everything, form a ball and cover it with a food wrap. Set it aside for 30 minutes.

2. Peel apples and grate them on medium mesh. Add pudding powder, cinnamon, sugar and set aside for a moment. Meanwhile heat the oven to 180Β°C.

Take the dough from the fridge. Cut 1/3 of the dough and put to the fridge and roll out the rest of the dough. Transfer the dough to form lined with baking paper. Put to the oven for 10 minutes.

3. . Prepare meringue layer. Beat the egg whites with pinch of salt till stiff. Then add carefully sugar ( whipping all the time the whites) add potato fllour. On baked bottom of pie add apple mix, meringue layer and grated rest of the dough on the top (no waste).

Bake for 35 minutes till nice gold colour.
