Exotically tasty Thai potato wedges recipe
We might not be able to go on holiday, but you can always take a trip to Thailand... with your spuds
You may be sat there in the cold, dreaming of exotic, warmer climes. Hmm, liiiike, Thailand, perhaps? We know this year has put a lot of travel plans on the backburner, but if you want to feel like you’re one step closer to that trip of a lifetime, rustle up a batch of these Thai potato wedges.
Ok, I know it might not be quite the same as hopping on a plane and drinking god-knows-what out of a bucket, getting a dodgy tattoo that most definitely doesn’t say ‘live, laugh, love’ in Thai, and experiencing some questionable entertainment, but to be honest, now I’ve listed all that, I think I’d rather sit at home with a delicious pile of potatoes. Fewer regrets, considerably tastier, significantly cheaper, amirite?
We’ve had a word with The Potato People, aka Albert Bartlett, and they suggested this recipe to cure a case of serious missing-holidays-and-travel-itis. We tried it, and can confirm, it warmed our cockles like we were sunning ourselves on a beach in Phi Phi Leh. Sadly, you don’t get a young Leonardo DiCaprio thrown in to enjoy them with, but hey, we can’t work ALL the miracles around here.

Potatoes are usually my go to side dish. I never thought of using Chinese 5 spice mix on them. I’m definitely going to try this.

I made this for dinner tonight and it was great. I had to grind my own blend of Chinese five spice because nowhere had Chinese five spice and I made my own Hoisin sauce because I prefer home made sauce and it was very easy. Thanks for the recipe.
