Foods I've eaten this past week!

Hi everyone, even though I find it hard to post, I always take pictures of my food, so here's what I ate this past week!

Monday:

Beyond burger in a panini with mayo, lettuce, onion & tomato, served with wedges!

Tuesday:

On Tuesday I wasn't feeling like cooking, so pasta came to save the day. I like to add garlic, oregano, chilli flakes and nutritional yeast after I cook my pasta with a splash of olive oil and black pepper. I served them with some vegan sausages from Linda McCarthey!

Wednesday:

Wednesday was burrito day! I added brown rice, red beans with peppers, oyster mushrooms & vegan cheese! I toasted them to and served them with avocado!

Thursday:

Next on the list, basmati rice with spinach cooked in a peanut sauce, served with marinaded, oven baked tofu!

The tofu was marinaded in olive oil, soy sauce, maple syrup, oregano, chilli flakes & garlic and baked for 20-25 minutes until golden!

FRiday:

Another rice dish, I can basically leave off rice, as you can tell :D This one is basmati rice with cabbage served with spring rolls! Recipe coming soon for this one, stay tuned!

Saturday:

On Saturday we had a tapas style meal, with oven baked potatoes, butter beans served with hummus and salad! I'll the recipes below! For the potatoes, I just cut them in wedges, added olive oil, salt, pepper and oregano and cooked for 35 minutes at 180 Celsius, turning half way through.
