FoodTribe's Side Challenge finalists are in: vote for your fav side!
So many sides, so little time. Not gonna lie, this was a hard decision to make...
I hope you all have had a good and safe weekend! I know this has taken me a while and you was probably wondering if I was getting all John Coleman with it. A big thanks to all that have participated, there were a total of 19 entries. Now here are my results.
Honorable Mention Voodie Vie: Vegan Broccoli Salad
With quite the list of ingredients this salad does sound like all the flavors will work wonderful together. The only thing I would substitute is the vegan mayo for regular mayo. Very vibrant and colorful to look at as well. After all food does seem to taste better the more senses you stimulate. I would probably actually make a meal out of this instead of using it as a side.
#5 Angel L: Chinese cucumber salad
This cucumber salad is very pleasing to the palate. There is still a nice crunch of the cucumber, a bit tart, a bit salty, a bit of spice and the amazing fragrance of sesame oil. Very nicely balanced and delicious.
#4 Darren Parsons: Apple and Beetroot relish
This has a very nice balance of flavors as you have the sweet and tart of the apple with the earthiness of the beetroot and a bite from the ginger. Pretty simple to make and just a few ingredients. Bonus is the amount is great for just two people and you can just add more from there.
#3 Christy Sanders-Sarti: Corn on the cob with smoky parm cilantro butter
Absolutely can't wait to try this. The blend of flavors sound amazing! I just can't decide what I want to have it with.
My second recipe for Jane Fyffe's #sidesmatter challenge
#2 Doug F: Hungarian Mizeria
I am beginning to realize that every country seems to have their take on cucumber salad. This has made it really hard for my decision making. This is nice and creamy with a couple of other vegetables to compliment.
#1 Zahra Shafiei: Iranian cucumber tomato salad
This had a wonderful balance and goes great with a fatty, rich, grilled meat. I will be making more of this one for sure if I don't drink all the unripe grape juice first. The unripe grape juice definitely adds a nice flavor to the salad. Lime and vinegars would taste good as well but this adds a different sour flavor.
Simple, quick and refreshing Iranian staple salad.
